I love Lundberg Organic Sushi Rice & use it in lots of things besides homemade sushi. The plump little grains are fantastic with steamed veggies & savory tofu. I think my favorite use, though, is for rice pudding. RICE PUDDING, my grandmother’s recipe from about 100 years ago ...modified by me. Preheat Oven to 325 F This rice pudding is one of the few things my mother remembered about her mother who died in 1927, when my mom was 7 years old. 1/2 Gallon whole milk ½ cup white rice. I love Sushi Rice. Do NOT use pre-cooked, like Uncle Ben’s 1/2 cup maple syrup (Grade B...cheaper & richer) ½ teaspoon salt 2 teaspoons vanilla (at the end) 2/3 cup dried fruit (optional) Add towards end of cooking. Currants, golden or regular raisins, pears, apricots, prunes, tart cherries (cut each one in half, they sometimes have pits). If using crystallized ginger, add just 1/2 cup. Chop the larger dried fruits or use scissors. Put the rice, maple syrup & milk in a 9” x 13” or larger pan. Put it on a larger cookie sheet in case it slops when you’re stirring it. Cook at 325 F for approx. 2 - 2 ½ hours. Stir at these intervals: 30, 30, 15, 15, 15 add the dried fruit here, 15 add the vanilla here, or, even, after removing from oven A golden “crust” will form each time, just stir it in. I use a spatula instead of a spoon. It should still have quite a bit of liquid, you don’t want it dry. Even after you take it out of the oven, the rice will continue to absorb the milk. Don’t cook it TOO long, only the “crust” should get golden, not the rice pudding itself. Fantastic eaten warm for breakfast outside in the sunshine with someone you love. xoxo
